This No knead bread is a must try for everyone.
Stress-less , soft and satisfying
No Knead (kneadless bread roll); the name says it all.
This bread is stressless, NO kneading, NO pain and NO frustration over not getting it right ; and of course no tired arms from fighting with the bread dough.
Simply throw the ingredients into a bowl, mix and mold. THAT’S IT? Yes that- is -it .
If you have never made bread before and have always wanted to give it a shot, but you feel daunted, as per intimidated by all the bread images and recipes you see online especially on instagram(cough cough I can relate) then this recipe is for you.
Even if you love baking like I do but tired of kneading bread dough or better still you have a mixer but want to give it a rest, I highly recommend this no knead bread.
I must confess that it is not the best bread recipe if you are planning on storing it for a long time (go for this recipe HERE instead) because it only stays super soft for two days, but trust me , you’ll get a soft and delicious dinner bread roll and you won’t even notice it because this no knead bread will be gone on the first day as you, your family or friends won’t stop going for more.
As for the ingredients, you’ll notice that I added ginger; even though it is optional and you don’t actually need it. I think it gives the yeast a little boost, and the taste won’t be noticable.
So now to the recipe.
Ingredients
- 1 tbsp dry yeast or 3 tbsp fresh yeast
- 1/2 cup sugar
- 1/4 teaspoon ginger powder (optional but helps dough rise faster and you won’t notice the taste)
- 1/2 cup(125 ml) warm water
- 6 cups bread flour or plain flour) PLUS 3 tbsp for dusting
- 1 tsp salt
- 1 cup(250 ml) lukewarm whole milk or 2 tbsp milk powder mixed in 250ml water
- 4 tbsp unsalted melted butter
- 1 egg, well beaten
👩🍳Steps:
1. In a small bowl, add Yeast + 1 tbsp of sugar+ginger+lukewarm water. Mix and leave for 5 mins until it forms some bubbles or foams
2. In a large bowl pour in the flour, the remaining sugar and the salt and mix well
3. Add the milk, butter, the beaten eggs and all the yeast mixture and mix well with a spatula or wooden spoon – don’t worry, it’s a sticky dough.
4. Now cover with a cling film and place in a warm place to rise for about 1 1/2 hours or until doubles in size.
5. While the dough is rising, oil or line a pan with a baking sheet.
6. Remove the cling film and punch down the dough. Using a scrapper, pull out the dough and pour on flour dusted work surface.
7. Sprinkle some flour on the top of the dough and carefully shape dough into a log. The dough would still be sticky, but don’t be tempted to add too much flour, use the little flour to make it easier on your hands without kneading it into the dough.
8. Now cut the log into 4 pieces, then cut each of that piece into 3 or 4 pieces, depending on the size of the pan you’re using.
9. Press down each piece with your palm and form into a ball. Use the flour to make the folding easier. Then place the ball on the prepared pan.
10. Spray the bread with cooking spray or oil a cling wrap , then place it over the baking pan.
Leave the bread pan again in a warm place and let rise again for 45 min, like almost double in size.
11. Preheat oven to 180C(350F) for 10mins. Transfer the bread to the oven and bake for 15 – 20 minutes, or until the surface of the bread is a golden brown.

When molding or forming the bread rolls, the dough would still be sticky, but don’t be tempted to add too much flour, use the little flour to make it easier on your hands without kneading it into the dough.
Ginger was included in the recipe but it is OPTIONAL and you canreally do without it, but it is a natural dough improver and it also helps to leaven the bread faster.
In the absence of dry yeast(active or rapid rise ), you can also make use of fresh yeast as indicated in the recipe.

Thanks for this post, I am trying it but I hope it will come out fine because I am used to the kneading method but what makes me not to do bread often is the stress of kneading but if this come out fine and soft, I am sure my husband would like it.
