Chicken laps plus chicken thighs is equal to chicken leg quarters; and that is my favorite part of the chicken.
The tender meat in this part of the chicken is unarguably the tastiest and of course the juiciest .
My little children call it the ”number seven” because the shape looks somewhat like a 7.
I know that our ”Fit-Fam Friends” would rather go for the white chicken breast which is the leanest cut of the bird; but as much as I like that too, when it comes down to taste and flavor , just like in this baked chicken recipe, I’ll gladly opt for the chicken leg quarters.
So today I’m sharing one of my fall-off-the-bone baked chicken thighs; massaged and well marinated in a flavorful spice mix and baked to perfection.

Ingredients for oven baked chicken
- 1 tablespoon onion powder
- 1 table one tablespoon garlic powder
- 1 tablespoon dried Rosemary
- 1 tablespoon dried thyme
- 1\2 tablespoon black pepper
- 1\2 tablespoon red pepper
- 1\2 tablespoon Paprika
- 1 tablespoon chicken bouillon powder
- 1\2 tablespoon salt (to taste)
- 2 large chicken leg quarters
- 1 tablespoon butter(melted)
- 1 tablespoon vegetable oil
How to bake chicken quarters
- Combine all the spices in a small bowl and set aside. You can also make use of your favorite spice blend, but make sure to choose a good combo that will give your chicken a burst of umami flavors.
- Pat dry the cleaned chicken leg quarters and using a sharp paring knife, gently lift up the skin on the chicken legs.
- Combine the melted butter and the vegetable oil in a small bowl and pour it into the ”pockets” of skin fold you just created. Also massage unto the whole chicken legs until well covered .
- Then add the spice mixture and also massage it unto the chicken, until all sides are fully saturated with the spice mix.
- Cover with a cling film and marinade in the fridge for 30 minutes or overnight or you can also bake immediately if you are short for time. Marinating the chicken helps the spices penetrate better and also tenderizes the meat and enhances its flavor.
- Bake in preheated oven at 180ºC or 350º F for 4o to 45 minutes.
- When the chicken is done cooking, you’ll notice the liquid(gravy) in the pan; pour it over the chicken leg quarters .
- Serve and enjoy.
